Cashew Nut Processing in India
Processing
Drying: Cashew nuts are dried in the sun for three hours after collection.
Steaming: After drying, the nuts are steamed for approximately half an hour and then cooled for 12 hours at room temperature.
Shell Removal: The outer shell is removed using machines or manually at a temperature of about 60°C over 24 hours.
This step is performed carefully to prevent damage to the kernel.
Grading: Cashew kernels are sorted into different grades based on size, color, and texture.
Whole cashews are divided into 15 grades, while pieces are divided into 9 grades.
